Grilled oysters with garlic, white wine, parsley and lemon

This past weekend my buddy Frank’s family came in from France and we wanted to greet them with a little Southern hospitality. Frank and I have been craving grilled oysters since we spent my bachelor party weekend in New Orleans back in October. And being that crawfish are in season also, I figured what better way to enjoy a taste of New Orleans. My good friend Kris was able to get some amazing fresh oysters for us.  I grilled and topped them with a simple sauce . 

 

Serves 4  

Here’s what you’ll need: 

  •  2 dozen oysters, shucked 
  •  2 Tablespoons garlic, minced 
  •  3 Tablespoons butter 
  •  1/2 cup white wine 
  • 1 Tablespoon flat leaf Italian parsley 
  • Salt and pepper to taste

Oysters are a fun way to get friends involved in the meal.  Put two of them on shucking duty to open the oysters.  

 

Put the opened oysters on a tray lined with some ice.

  

To make the sauce: 

 Melt butter in a 2 quart saucepan over medium-high heat. Sauté garlic in melted butter until fragrant. Next, add white wine to saucepan and reduce by half. Once sauce has reduced remove pan from heat, add parsley, salt & pepper, and stir. Place in heatproof dish and set aside. 

Grill the shucked oysters face side up on a preheated grill. Using a grill brush, lightly brush sauce on oysters and grill until edges of oysters start to curl slightly. Remove from grill and place on platter with plenty of lemon wedges and lots of napkins. Enjoy!
