Brown rice and kale pilaf with shallots

I’m making brown rice and kale pilaf with shallots to accompany my chicken with lemons and olives but this dish is a great side dish for many meals.  Simple, fresh and healthy. 

  

 Serves 4 to 6. 

Here’s what you’ll need:

  • 2 cups brown rice ( I use Uncle Ben’s)
  • 2 cups of kale, chopped
  • 4 tablespoons shallots, sliced
  • 1 tablespoon of olive oil
  • 2 1/2 cups of chicken or vegetable stock
  • salt and pepper to taste

Heat oil in sauce pan to medium high heat.  Add shallots and sauté for about 1 minute.  Add kale and sauté until the kale darkens; about 2 minutes.  Add rice and stock and bring to a boil.  Once boiling, lower temperature to simmer and cover.  Cook until water evaporates, remove from heat, stir and serve.
